Hearty Grilled Beef Recipes That Are Seriously Satisfying

Peaches and Spices Ribeye Steak

What do you need:

  • 6 ribeye steaks, 1-inch thick

  • 12 peaches, peeled, pitted, and halved

  • 1/4 cup balsamic vinegar

  • 2 tablespoons chopped thyme

  • 1 tablespoon butter, melted

  • 1 tablespoon of salt

  • 1 tablespoon plus 1/2 teaspoon ground black pepper

  • 1 tablespoon paprika

  • 2 teaspoons garlic powder

  • 2 teaspoons onion powder

  • 2 teaspoons lemon pepper seasoning

  • 1 teaspoon of sugar

  • 1 teaspoon ground cumin

  • 1/2 teaspoon crushed red pepper

  • fresh thyme sprigs

Combine salt, 1 tablespoon ground black pepper, paprika, garlic and onion powder, lemon pepper seasoning, cumin and red pepper. Rub both sides of each steak with the mixture. Cook steaks on preheated grill, covered, to desired doneness. When it’s ready, remove it from the heat and let it rest for 8 to 10 minutes. Grill the peaches over indirect heat for 5 minutes. In a medium bowl, whisk together the remaining black pepper, balsamic vinegar, chopped thyme, butter, and sugar. Toss grilled peaches into the batter, then serve with steak topped with fresh thyme sprigs.

Grilled Skirt Steak Salad with Cilantro Dressing

What do you need:

  • 1/4 pound beef flank steak, trimmed of fat and diamond-scored

  • 1 corn, shelled and silks removed

  • 4 cherry tomatoes, cut in half

  • 2 yellow bell peppers, seeded and halved

  • 2 onions, chopped

  • 2 cups of mixed vegetables

coriander dressing

  • 1 garlic clove, peeled and quartered

  • 3 tablespoons lime juice

  • 2 tablespoons chopped fresh cilantro

  • 2 tablespoons minced shallot

  • 1 tablespoon of water

  • 1 tablespoon olive oil

  • 2 teaspoons of honey

  • 1/2 teaspoon chili powder

  • 1/4 teaspoon ground cumin

  • 1/4 teaspoon salt

Combine the garlic, lime juice, coriander, shallot, water, olive oil, honey, chili powder, cumin, and salt in a blender or food processor. Pulse until the mixture is well combined and smooth. Place half of the dressing in an airtight container and chill in the refrigerator until ready to use. For the remaining half in a resealable plastic bag and place the steaks in the bag. Refrigerate for 30 minutes. When done, remove meat from bag and discard excess marinade. Brush corn, sweet peppers and onions with olive oil. Cook beef and corn over medium heat on grill for 20 minutes or until cooked through. Grill the sweet peppers for the last 8 minutes and the onion for the last 4. Cut the fillets into thin strips. In a serving platter, combine grilled meat, grilled vegetables, greens, and tomatoes. Top with cilantro dressing.
