While it’s not for everyone, many steakhouses are fans of spicy food. And why wouldn’t they be? Spicy food makes you enjoy food better and makes you want to eat more! Grilled Spicy Chicken Adobo

What do you need:

  • 1 kilogram. boneless skinless chicken thighs

  • 1 can (7 oz) chipotle peppers in Adobo sauce

  • 3 garlic cloves, minced

  • 3 tablespoons apple cider vinegar

  • 1/2 teaspoon salt

  • 1/2 teaspoon cayenne pepper

To create the marinade, place the chipotle peppers, adobo sauce, garlic, apple cider vinegar, salt, and cayenne pepper in a blender or food processor, then pulse until all ingredients are blended. Place chicken thighs in a 1-gallon Ziploc brand food storage bag and pour marinade over chicken. Seal bag, shake, and refrigerate 2 hours to overnight to marinate. When done, discard the marinade and cook the chicken on a preheated grill over medium-high heat until cooked through, about 6 to 8 minutes per side.

Note: Use 3 chipotle peppers and 2 tablespoons adobo sauce for mild spices, 6 chipotle peppers and 3 tablespoons adobo sauce for medium spices and use the whole can if you prefer hot and spicy.

Sweet and Spicy BBQ Pork Strips

What do you need:

  • 2 pieces pork tenderloin (about 12 oz each)

  • 12 cloves garlic, crushed and coarsely chopped

  • 1/2 cup soy sauce

  • 1/4 cup olive oil

  • 1/4 cup cilantro or parsley, finely chopped

  • 6 tablespoons brown sugar

  • 2 teaspoons of mustard. dried and ground

  • 2 teaspoons ground ginger

  • 1 teaspoon paprika

Place the garlic, soy sauce, olive oil, cilantro, brown sugar, mustard, ginger, and paprika in a large Ziploc bag. Seal and shake bag to thoroughly combine ingredients. Place the pork tenderloins in the bag and let them marinate in the refrigerator for at least 4 hours.

When ready, let the bag sit for 20-30 minutes at room temperature. Discard marinade when ready to grill. Cook the pork loins on a preheated grill over medium-high heat until cooked through, depending on your preferred doneness.

Once cooked, cover and let rest for 5-10 minutes before slicing. It is best enjoyed with a side of rice or fresh or roasted vegetables.
